The soup-less Tantanmen noodles are flavored with homemade raayu, a variety of spices, and the numbing effects of sansho (Japanese pepper).
There are three levels of spiciness to choose from: hot, normal, and moderate.
The noodles take 7 minutes to boil due to the thick noodles.
The noodles are topped with minced meat, seasoned eggs, nuts, and Chinese cabbage.
The thick soupless dandan noodles are made creamy with sesame paste.
In addition to tantanmen, soy sauce and salt ramen are also recommended.
The soy sauce ramen uses dried scallops and super special soy sauce honzen. Chicken meat and smoked chicken thigh chashu are used.
Shio Ramen uses chicken breast and smoked chicken thigh char siu pork.
The noodles are made from the famous Asakusa Kaikaro.
