〜Sea bream and clams with salted soba noodles〜
Salt Sauce
A blend of Okinawan sea salt and Mongolian rock salt, with an emphasis on minerals and magnesium, to provide a delicate taste.
Dashi (soup stock)
We combine broth from sea bream from Uwajima, Ehime Prefecture, clam broth from Kuwana, Mie Prefecture, and three types of dry soup stock to create a delicate yet deep broth without using any animal products.

Inca berry sauce refers to the edible hoochberry, also known as the golden berry. It is a superfood extremely high in antioxidants and rich in vitamins, iron, and potassium. We have created our own unique blend of this sauce for salt soba noodles.
