It was renewed in November 2022 and its taste was upgraded. The distinctive feature is the clear CHINTAN soup.
Shio Ramen
The soup shines with a golden color.
The soup, called "CHINTAN," is made from pork and is not cloudy at all.
Usually, pork bone broth tends to become muddy, but not at this restaurant.
In addition to pork gengkotsu (pork bones), the soup has an animal-based flavor made from the back bone and skin of the pig, followed by the taste of seafood such as dried bonito, dried bonito flakes, and mackerel flakes.
This is not a balance of animal and seafood broths, but rather a feeling as if one has been shot through the brain with a time difference.
The noodles are low-padded straight noodles with a firm texture, and I like how they subtly assert themselves without interfering with the broth.
The ingredients are simple: chashu pork, green onion, and bamboo shoots on top of the noodles.
However, the crunchiness of the bamboo shoots and other ingredients are just right for a break from the soup.
It is a bowl of soup that you can finish to the last.
