"Machida Shiruba" specializes in salt ramen and is very particular about its soup.
Shio Ramen
Shio Ramen, is a soup made with whole Sansui Jidori chicken and Koshu Jidori chicken bones, with flying fish from Nagasaki Prefecture added to maximize and balance the flavor of the Jidori chicken, and a sauce made with a blend of six different carefully selected salts.
The noodles are homemade from Japanese wheat and are smooth and thin.
Niboshi Shio
The owner selects and blends seasonal dried sardines into the pork bone broth made from domestic pork gengkotsu (pork bone) to create a rich soup stock.
The noodles are made of stone-ground whole wheat flour from Hokkaido, creating a powerful bowl of noodles.
The main store is too far away for me to get to, but there's a second store right in front of the station, so I suggest you go there!
