Ginza HACHIGO (銀座 八五)

Ginza-HACHIGO

Feature

The owner worked in French cuisine for many years and opened a ramen restaurant after retiring.
With his experience in making French cuisine, the soup is made without using sauce.
It is more like French soup than ramen soup.

The base of the soup is mixed in about two days, using a wide variety of ingredients such as chicken, itaya clams, dried tomatoes, kelp, dried shiitake mushrooms, and sea salt from the Guerande region of France to bring out the flavors. As a result, the soup is not salty even after the last drop is consumed.

The noodles are made by the famous Asakusa Kaikaro and are thin and straight. The noodles are made in such a way that they do not interfere with the soup and that the noodles stay with the soup.

This is almost like going to drink the soup rather than eat the ramen.

There is a huge line every day, sometimes more than 40 people in line. It takes a certain amount of determination, but it is a bowl of ramen that I would like to try.
