Ganko Ramen was started by Mr. Yasuyuki Ichijo, who was very particular about what he was doing.
As of February 2023, the restaurant has expanded to an 18th generation apprentice.
Also note that the restaurant is closed on days when the soup is not good.
The soup is based on natural dashi, NO MSG, and is a blend of seafood broth based on beef bones.
However, the most distinctive feature of this restaurant is that the taste of the soup varies from day to day.
Basically, there are "refined" and "vulgar" soups.
The "refined" soup is clear, while the "vulgar" soup is cloudy.
The "vulgar" soup is more popular.
There is also "100," which is 100% broth, "devil," which is salty, and the mysterious "Hiropon.
Like a gacha, you will have to wait until you get there to find out which soup you will get.
The noodles are shiny yellow, medium thin, and wavy.
The waves intertwine well with the soup.
Ingredients include two pieces of pork belly chashu pork, nori (seaweed), menma (pickled bamboo shoots), green onion, and scorched green onion on top of the noodles.
The ramen has a strong individuality, but it is an addictive dish.
