The president of "Kanda Katsumoto" had been involved in French cuisine for many years, but after retiring, he opened a ramen restaurant.
In addition to "Kanda Katsumoto," he also runs "Chinese Soba Katsumoto" in Suidobashi and "Yago" in Ginza.
The specialty of "Kanda Katsumoto" is "Tsukemen" (dipping noodles).
The noodles are made by the famous Asakusa Kaikaro.
The original noodle is made by the two restaurants working together and sharing their opinions to match the soup of "Katsumoto".
The noodles are smooth and silky.
Even now, the noodles are being upgraded in pursuit of even more deliciousness.
Katsumoto says, "Soup is a living thing".
Various parts of chicken, including Nagoya Cochin, are used. Shaved and dried bonito flakes selected from all over Japan.
He faces the unique ingredients and prepares the soup with all his heart and soul every day as if he were conversing with each soup, feeling the weather, temperature, and humidity that change from day to day.
The soup stock is a blend of dried sardines from Kujukuri, Chiba Prefecture; Hon-Bushi from Satsuma, Kagoshima Prefecture; Soda-Bushi from Tosashimizu, Kochi Prefecture; Saba-Bushi from Kagoshima Prefecture; and Hirako Dried Sardines from Ushibuka, Kumamoto Prefecture.
We procure freshly shaved, aromatic dried sardines.
Meat
We purchase the best quality pork at the time from our trusted experts.
We use different cooking methods for different parts of the pork, such as the belly and shoulder, to create several types of chashu pork.
You can enjoy a different combination of chashu pork for each soup.
Other ingredients besides chashu are menma, nori, naruto, green onion, and mitsuba.
