Rather than trying to make a big impact, the owner, Mr. Sakurai, aims to create ramen that can be eaten every day without getting tired of the taste.
He is particular about not using any chemical seasonings in order to make the most of the flavors of the ingredients.

Soup
The richness of soy sauce is strongly felt. In addition, the chicken oil reinforces the flavor.
The simplicity of the soup highlights the importance of the balance between the soup and sauce.
The chicken broth is made mainly from Nagoya Cochin chicken bones, Hinai Jidori chicken, and Daisen Chicken, with dry ingredients such as dried bonito, shiitake mushrooms, and Hokkaido kelp, and flavored with aromatic vegetables.
The soy sauce is a blend of seven different kinds, including dark soy sauce from Miyazaki, tamari soy sauce from Aichi Prefecture, and re-finished soy sauce from Shimane Prefecture.

The noodles are thin. They do not disturb the simple soup.
The volume is small, so a medium serving is recommended for men.

The special toppings include a total of six pieces of pork and chicken chashu pork, seasoned eggs, bamboo shoots, nori, greens, and kujo onion on top of the noodles.
The chashu pork is marinated in malted rice and vacuum-cooked at low temperature. The bamboo shoots are purchased in a dried state, rehydrated in the store for three days, and seasoned. Eggs are sourced from Nasu, Tochigi Prefecture.
