The owner, Kurando Shiraiwa, passed away on February 20, 2023. There were no successors, and the store was closed.
We would like to express our deepest condolences.
The owner honed his skills at "Kudan Ikaruga" for about seven years before going independent.
The soup is a blend of dashi broth made from old whole chicken and chicken bones with a large amount of chicken meat chased and thrown in, and seafood broth made from four types of dried sardines, Urume-bushi, thick shavings of bonito, and kombu.
The noodles are smooth and have a firmer texture that pushes back against your jaw when you bite into them.
The ramen is very tasty, but since the restaurant is crowded every day, the rule is to fill in your name on the day of your visit.
If you do not speak Japanese, you will not be able to taste this gem.
