The soup is a perfect blend of Japanese dashi and chicken broth.

Hakodate kelp and shiitake mushrooms from Oita Prefecture are used for the Japanese-style soup stock.
The chicken broth is made from Nagoya Cochin and Kagoshima Akadori whole chickens to bring out the best flavor.
The soy sauce is a blend of special dark soy sauce from Chiba Prefecture, cedar barrel-aged soy sauce from Kagawa Prefecture, and sweet soy sauce from Kumamoto Prefecture.
The noodles are homemade.
Flour is made from Japanese "Haru no Ibuki", Italian "Durum Semolina" and other strong flours, tapioca flour, and medium-strength flour.
The special toppings include pork chashu pork, chicken chashu pork, seasoned eggs, bamboo shoots, green onions, and nori (seaweed) on top of the noodles.
The pork chashu pork is made from the shoulder roast of "Jyoshu pork" produced in Gunma Prefecture, which is brushed with special salt to lock in the flavor and then grilled.
Chicken char siu pork is tenderized by marinating Japanese chicken breast in our original sauce and cooking it at a low temperature.
