Ramen Shima was opened in 2020 by the owner who trained at Shina Sobaya in Yokohama. The soup is well-balanced with an increased strength and richness of soy sauce and a complex layering of jidori chicken and seafood broth. The ingredients include four kinds of special chashu pork: boiled pork loin and rose, hanging roast loin, and boiled chicken thigh. The ramen is very tasty, but because the restaurant is busy every day, the rule is to fill in your name on the day of your visit. It is a gem that cannot be tasted unless you can speak Japanese.
