The medium-thin, straight noodles made by Mikawaya are smooth, chewy, and firm on the tongue.
They go well with the soup.
The soup is dark in color, but not too dark. The aroma of dried bonito passes through the nose, and the flavor of the chicken broth and the aroma of soy sauce are well balanced and mild.
The ingredients are chashu pork, leeks, onions, bamboo shoots, and wontons on top of the noodles.
In addition, the salt ramen is not only salty, but also designed to maximize the sweetness and flavor of the broth. This is another must-try dish.
