The sharpness of the soy sauce enhances the flavor of the ingredients in the soup.
The noodles are made by the famous "Mikawaya Noodles".
The noodles are hard, thin, and straight, and have a presence that is as strong as the soup itself.
In other words, the noodles and the soup are in a friendly competition with each other.
The ingredients are two kinds of chashu (pork), a large piece of green onion, half ajitama (seasoned egg), and mitsuba (mitsuba leaves) on top of the noodle.
At other restaurants, you have to buy the ajitama separately, but it is nice that half of the noodles are included by default.
The staff says, "If it tastes too strong, we can dilute it," but no one dilutes the soup.
