"HIIKI" has evolved in a unique way that is distinct from Iekei-style ramen. Iekei is a type of ramen based on soy sauce and pork bone broth.

The ramen can be tuned to one's own taste. There are three levels of noodle hardness: "KATAME," "FUTU," and "YAWARAKAME," in order of hardness. The three levels of flavor are "KOIME," "FUTU," and "USUME," in order from strongest to weakest. The three levels of oil are "OOME," "FUTU," and "SUKUNAME" in descending order of oil content. If you are not sure, just choose "FUTU" for all three.

The noodles are made by Sakai Noodles, which is famous for its Iekei style noodles, and feature a medium-thick, flat noodle. They go perfectly with the soup.

The soup is made with a good balance of soy sauce, pork bone broth, and chicken broth, and is mildly seasoned.

Ingredients include three sheets of nori (seaweed), two pieces of chashu pork, and greens on top of the noodles. There are three kinds of toppings: garlic, ginger, and soy bean sauce.

It is a good first step for those who do not like tonkotsu ramen.
