Noodles
There are two types of noodles: thick and extra-thin.
Only the thick noodles can be topped up with a large portion for free. However, please note that the extra-fine noodles cannot be oversized.
Thick noodles are medium-thick and straight. Ultra-thin noodles are common in Kyushu ramen, but in this restaurant, thick noodles strangely intertwine well with the soup.
As an option, you may also choose thick noodles.
For the "kaedama" (extra-thin noodles only), you can choose from seven different degrees of boiling.
In order of hardness, there are: "KONAOTOSHI", "HARIGANE", "BARI-KATA", "KATAME", "FUTU", "YAWARAKAME", and "CHOYAWA".
Soup
The soup is smooth and thick with little odor.
The soup is a blend of not only pork bones but also dried seafood from Kujukuri-hama.
