Feature
"TANAKA-SHOTEN" is handicapped by being open only at night, being in the suburbs from Tokyo, and being far from the station.
However, it offers delicious Nagahama ramen.
Noodles
The noodles are ultra-thin and straight, a characteristic of Kyushu ramen.
You can choose from four levels of noodle boiling.
In order of hardness, they are "Harigane", "Burikata", "Normal", and "Yawa".
Soup
The soup has a strong flavor and richness from the pork bones, and is so thick and rich that it is hard to stop pouring it over the top.
Ingredients
Chopped green onion, kikurage mushrooms, nori (seaweed), and two slices of chashu pork.
Toppings include red ginger, spicy takana, sesame seeds, and garlic from Tago, Aomori Prefecture, so there is no need to "change the flavor.
When paying for your order, you will be given a coupon for a free "kaedama" (one more noodle), which you can use the next time you visit the restaurant.
