"ITTOU"'s concept is based on the idea of medicine and food as the same source, offering better tasting, safer, and more affordable food.
The noodles are very thick and straight. The aroma of wheat can be felt firmly with each bite.
The soup is a double broth of thick, rich seafood and chicken.
The seafood and chicken broth is blended in a well-balanced manner.
The special toppings include three kinds of chashu pork, flavored eggs, and nori seaweed on top of the noodles.
Also, tsukune (tsukemono) and extra-thick menma (bamboo shoots) are in the soup.
Two types of salt are used: "Guerande salt" and "Awakuni salt.
These two types of salt are called "natural sea salt" and are made by either pumping seawater and condensing it in salt fields with the help of wind and sun, boiling it down in a cauldron, or crystallizing the condensed seawater in the sun, which is a very laborious process.
The chickens are "Tsukuba Akane Chickens".
These chickens are raised on pure plant-based feed, and their meat cells are extremely dense and absorb the flavor components, giving the meat a chewy texture. The fatty parts in particular have the best flavor, which is blended into the soup.
Finally, women are offered sorbet.
